The results of the chemical analysis, amino acid composition and biological quality of five varieties of sorghum grain (Sorghum vulgare) cultivated experimentally in Chile, are shown. The samples analyzed contained significant quantities of phosphorus but were poor in calcium. the protein contend ranged between 9.2 and 11.0 classifying them, according to the literature, in the group of those so called "sorghum of high protein content". The ether extract was comparable or even slightly superior to that of normal corn. This was true also of the caloric value. |
